Coronation Chicken of the Woods

This traditional dish uses the epic and highly sought after Chicken of the Woods mushroom. It’s flavour is mild and mushroomy but the texture is very similar to that of chicken and have long, strong fibres that hold it together to really help replicate that chickeny texture!

Ingredients:

  • Chicken of the Woods mushroom

  • 3-4 tbsp (vegan) mayo

  • 2 tbsp Mango chutney

  • 1 tbsp curry powder (more to taste)

  • A handful of currants or sultanas

Method:

  • First, shred your chicken of the woods. This is easily done with two forks as you would when pulling cooked chicken.

  • Then fry your chicken of the woods in a high smoke point oil, use only a small amount of oil as the mushroom will release a lot of liquid and it can stick to the bottom of the pan. Cook for at least 20 minutes to ensure the mushrooms are fully cooked and browned.

  • While the mushrooms cook, mix together the remaining ingredients in a bowl.

  • Add the cooked mushrooms to the bowl and mix together.

  • Enjoy on a sandwich or baked potato!
